Pak Choi (bok choy) is a popular variety of cabbage used in Asian dishes. The leaves and stalks taste great raw or cooked. It has a pleasant and slight mustard flavour. Pak choi grows best in cool weather. Matures in 45-60 days.
How to Grow Pak Choi
Pak choi is a cold-hardy leafy green that can tolerate frost as it grows. It thrives in cool temperatures, as the heat will make it bolt. Seeds are best sown in early spring, late summer or early fall.
If directly sowing seeds outdoors, the seeds can be started 2-4 weeks before the last frost. If starting indoors, the seeds can be sown 4-8 weeks before the last frost. When the seedlings are 2 inches tall, they can be transplanted outside 2-4 weeks before the last frost. Use mulch to retain the moisture and temperature. Space plants 9″ apart. Do not let the plants dry out.
